Pressure Sensitive or PS is the way to go. There are different label applicators out there that offer speeds that will work directly with your fillers. I would tend to agree that an in-line pressure-sensitive applicator may be a little more cost up front, but many will last for 10 or even 20 years with little upkeep. I'm a little biased (we produce pressure sensitive labels for breweries, wineries, distilleries, etc.), but the mess from cold glue labels is a big turn off for a lot of breweries. There requires a significant amount of cleaning and also upkeep on the equipment just because the glue is in liquid form,transferred from separate containers and then inevitably makes a mess. Depending on the type of labels you're going to be using, that can more-or-less determine which type of labeler you should invest in. While the labels for most pressure-sensitive labelers are a bit pricier, they're said to be much easier to deal with and typically require no glue/adhesive. Cold glue cut-and-stack labels, however, are cheaper in the long-run and can be applied after bottling using a simple body label machine. Once you get past the initial set-up, these types of machines aren't usually very problematic and typically run quite well.
