Develop a very real business plan, don't try to blow smoke up your bankers backside just to get the loan. Figure out your real costs of operation, utilities, permits, raw materials, labor, debt service, etc. Be sure your sewer needs are addressed, don't put yourself in a building that will not grow with you for the first couple of years. If you are brewing 2000 bbls per year be sure your sewer connection can handle 14000 bbls of wastewater. Figure out if you can afford to work for free to get things going and then pay yourself as your business grows.
