For pizzerias, using a brick oven has a number of advantages.  First, using a brick oven allows you to market your restaurant as a brick oven pizzeria, which is itself a powerful marketing tool and may draw in customers that would not have otherwise tried your pizzeria.  Second, brick ovens impart a unique flavor to your pizza that may be pleasing to your customers.  Third, brick ovens have a decent pizza production output - pizzas only take about 5 minutes to cook in a brick oven, and you can fit about 10 pizzas at a time in a standard brick oven.  Unfortunately, brick ovens can be a tad expensive compared to the alternatives and usually have to be custom-fitted to your restaurant, which may cost additional time/money.
