Most craft and professional brewers are using stainless steel conical fermenters these days, for numerous reasons. - Conical fermenters are single tank, allowing for primary fermentation, aging, and storage all-in-one. - Sediment can be extracted via the bottom valve without having to use a secondary fermenter. In fact, sediment can be removed at any point in fermentation. - Yeast can be easily removed at any point, making it easier to wash the yeast. - Wort can be transferred without siphoning (using gravity). Certain conical fermenters actually apply pressure at the top to force beer through the bottom. - Conical fermenters tend to be quite easy to clean. Hope that helps!
