Drip coffee is usually seen as merely functional - and to a degree, that reputation has been fairly earned. Drip coffee filters tend to block much of the natural oil of coffee, leading to a lighter, less flavorful coffee (though some of your customers may actually prefer that kind of coffee if that's what they're used to). Drip coffee is not likely to be satisfying to coffee aficionados, however, so it's not recommended to serve drip coffee in a dedicated coffee shop. The main benefit of drip coffee is that the coffee can be pre-made and left on the warming plate until ready to serve. This is incredibly useful in a busy kitchen, where your employees may not have the time, expertise, or awareness to serve coffee-to-order.
