Full-boiling has a lot of benefits, though brewers often get along just fine doing a partial boil. Generally speaking, full-boiling the wort: 1) reduces the risk of contamination as the water is brought to a complete boil; 2) results in better hop utilization; and 3) results in a lower concentration of sugar (the wort does not caramelize), which can substantially impact on the flavor of your beer.
