There are a wide variety of vegan and vegetarian "meat" substitutes.  Tofu is a popular choice, of course, but in recent years, seitan and tempeh have also grown in popularity.  Both seitan and tempeh have a hearty, chewable texture, and when cooked properly, they emulate the mouthfeel of real meat very well.  Seitan is made of wheat gluten, whereas tempeh is made of fermented soybean, so keep that in mind when preparing for allergy-conscious customers.
