What are some of the major differences between PVC/heat shrink capsules vs aluminum capsules? I will be bottling wine in Burgundy shaped bottles for my operation.

Pricewise, PVC capsules and aluminum capsules are in the same range, and any deviations will likely be according to supplier and how in-depth you want to customize the look of your particular capsules.  There are no functional differences between PVC capsules and aluminum capsules that would affect the quality of the wine.

PVC capsules are recyclable and more eco-friendly in general.  They generally appeal to winemakers who are looking for a simpler, perhaps minimalistic aesthetic.  

Aluminum capsules are often described as a cheap 'tin-like' alternative.  Though the material is obviously of a lesser quality to tin, an aluminum capsule can be hot pressed with complex, eye-popping designs, unlike a PVC capsule.
