A vibrating table is used to remove air bubbles from chocolate moulds, and sometimes to remove excess chocolate from an enrobed product for more even distribution.

After filling a mold it is tipped or vibrated to remove any air bubble that might have formed on the surface of the piece that would result in visible pinholes on the surface.

Vibrating tables automate a manual process and can deliver more movement than hand tapping/knocking can. This can lead to increased throughput because the operator can be working on two or three molds at the same time. (Filling one and vibrating one or two others depending on the size and configuration of the vibrating table.)

One thing to note about vibrating tables is that they can be noisy and that needs to be considered. For front of house situations their use is generally a non-starter.
