What can I tell my employees to improve fire safety in the kitchen?

There are numerous tips for kitchen fire safety that employees can be taught, but certain kitchen fire safety tips are a little less known than others. Consider teaching your employees the following: a) clean grease from near or on cooking surfaces, since grease is highly flammable and can result in an uncontrollable fire if not dealt with early; b) if a grease fire does happen, do NOT use water to put out the fire, use a fire extinguisher for large fires or baking soda for very small fires; and c) repair frayed wiring, as it can lead to sparks and therefore a kitchen fire when you least expect it.
