You'll have a LOT of options at your disposal, from cast iron, to machined steel, to carbon steel, hard chrome steel, and more.  They each have their own advantages and disadvantages of course.  Cast iron is fairly entry level (cheap), and does the job okay, but if you upgrade to machined steel, you'll find that it's easier to clean.  Upgrading further to even more expensive carbon steel will grant you an even easier to clean surface, and ensure that the cooking surface cooks more evenly, which can be great for crepes, pancakes, meat, and other items that need to be cooked through evenly from center to the ends.
