What is the best way to clean my copper distillery equipment?

I've read about people using wine and/or citric acid to do cleaning runs. I also have acsorbic acid available I could use.

There are many different ways and theories on how to clean a still.  Below is the way we would recommend:

Rinse with tap water.  Brush out any large solids.
Circulate caustic at 50 C.    Inspect for solids, use brush w/plastic bristles if needed.
Rinse w/tap water.
Circulate food grade citric acid at 50 C.  Inspect.
Rinse w/tap water.
