Your choice of bread slicer will depend on the production needs of your bakery.  If you need over 150-200 loaves sliced per day, then you should look into either a gravity feed bread slicer or a front-load bread slicer.  Both are capable of 200+ loaves per hour, so they are not only suitable for small bakeries, but are also capable of production for eventual retail distribution.  If you are a small bakery slicing less than 200 loaves per day, however, then a variety slicer might be a good choice.  A variety slicer gives you more control over the cut of the bread, too, so the customization options may be preferred for a higher-end, lower-production bakery.
