What is the minimum capacity recommended to have a full brewing filtration setup with all four clarification stages?

I've heard that for smaller brewpubs, one can simply use sheet filters for the entire filtration process, but for larger setups you'd want primary, trap filtration, etc.

 	For smaller brewpubs we think it makes more sense to go with a lenticular housing and filter set up due to the smaller footprint.  You can back-flush the elements (to offset the higher cost over sheets) and reuse.  Plus you get a better product yield with lenticular filtration than you will get with plate filters.  If you are packaging and selling through distribution, then other types of filters can be employed.

Function over Form.
if you are looking to bring a bright IPA with crisp palate in a brewpub that is turning tanks over every 2-3 weeks you can most likely stop at a 2.5 micron. If that IPA has had hops added into the fermentor ,then getting to that might be a pain due to the grassy elements. 

packaging for flavor stability or distribution elements adds another level to consider

our main considerations are usually flavor then visual impact, while maintaining foam stability and minimizing o2 pickup.

For smaller brewpubs I suggest you look at a lenticular housing. It takes up a lot less space than a plate and frame filter, is quicker to set up and break down and although the filter media is more expensive than filter pads you can back flush them and store them wet until the next time you use them. The filtration grades vary from large 9 to 10 micron pore sizes all the way to sterile 0.25 micron filtration if desired.

This answer is really dependent on whether you want to bottle the beer for retail outside of the brewpub.  Yes, while it is true that smaller brewpubs can simply use sheet filters (and fining agents), their business models are not reliant on the beer quality being sustained for than 90-120 days after brewing.  For larger brewpubs, the business model may call for packaging and distribution to regional retailers.  In such cases, it is the desire for sustained freshness and clarity that drives the use of larger, full-featured filtration setups.
