What sort of wood is good for smoking?

There is no absolute 'best', as this is a highly contested question among professionals.  Generally, for smoking, you want wood that as a higher moisture content and significant aromatics.  If you're going to be smoking milder meats, such as seafood, you may want to go with wood that is somewhat dryer and has less aromatic content.
