What steps should I take to properly season?

When seasoning a new griddle, you'll want to:

Make sure the surface of the griddle is free of dust and other particulate matter (wipe it down first).
Begin to rub oil, lard, shortening, or baking soda into the surface of the griddle with a cloth.  After you're done, heat  up the griddle to a high heat (between 340 and 410 degrees Fahrenheit).
After heating, turn the griddle off and let it cool.  Once it's finished cooling off, remove the rubbed in oil/lard.  It's recommended that you repeat the above two steps once more.
