When should I do a single infusion mash as opposed to a step infusion mash?

Whether you do a single infusion or a step infusion mash depends on how well-modified the grains are (highly modified malt).  If the grains are well-modified, then they can go through a single infusion mash just fine.  On the other hand, if the grains are less modified, then they'll need to spend more time being processed in the mash tun - the addition of a protein rest step during the mash process breaks down the proteins sufficiently.  Generally speaking, however, most grains are well-modified these days, so a single infusion mash should be fine for most brewers.
