Oak fermentation is much less popular these days as it is not necessary to use oak vats to gain the benefits of oak flavor and aroma.  Rather than using an oak tank/vat, wineries simply using oak powders and chips and blocks to impart the desired flavors and aromas.  Further, using a steel tank or some other fermentation tank means that the winery gains the benefits of modern fermentation equipment, which includes stronger, easier-to-clean equipment and faster aging wines.
